To add flavour to roast sweet potatoes without the fat of butter, a less fattening and tasty way, is to sprinkle with black pepper and feta cheese into the potato, once cut in half, and pop back in the oven for a few minutes so the cheese melts slightly.

If you want to grow potatoes at home and do not have a very big garden, get two very strong black bin bags, fill about a third and layer some seed potatoes, then fill with more with earth, then potatoes. You should be able to get about 3 layers of seed potatoes in the bag. Put outside and water daily, fold the top of the bag over to keep dark. You will then have new potatoes at various stages, and can continue to do the same without moving the bag full of soil.

To make the best lump free mashed potatoes, when boiled and fully drained, then mash thoroughly before adding butter, cream or milk. If you add butter or milk first you will not get all of the lumps out.
