    Just a general tip here, don’t be tempted to add garlic at the start of cooking – my husband always dumps it in with onions to fry and it inevitably burns easily – I always leave it till the end.

    or you can add garlic to the oil or butter, fry for a minute and then scoop the garlic out. That way, the garlic bits don't burn but you get a bit of garlic flavour in the oil.
     
    No, no no! Cook the onions first until they become transluscent THEN add the garlic so that it cooks for a much shorter time before adding your other ingredients. This way you release the lovely garlicky flavour without burning it and the garlic continues to enhance the main ingredients as the dish cooks.
