I know a delicious recipe for swede and parsnip soup. Just peel and cube the swede and then peel and slice a couple of carrots. Chop an onion and add it to the mix before scrubbing a chopping the parsnip into small chunks. Just add it to a bowl of vegetable stock and then boil for about 20 minutes or so (adding salt to taste). You can add some herbs as well, it’s a simple and quick recipe but one I’d definitely recommend.
