My mother used to make us ‘Zucchini bread’ when we were younger, which was traditionally made at the end of the courgette season in the USA. Basically it involves grating up the last of the courgettes and making bread from the. Just beat some eggs together in a bowl until they are light and frothy and then add some oil and sugar. Stir in the grated courgette and about 2 teaspoons of vanilla extract. Then mix together 3 cups of flour, 2 sticks of ground cinnamon, 1 teaspoon of soda, ½ teaspoon of baking soda AND THEN A PINCH OF SALT AND SOME NUTS. Stir it all into the egg mixture and then bake for about 60 minutes.
