    Great recipe for using up your spare courgettes and aubergines. Slice them both up into thin slices and then stack them up in an ovenproof bowl, alternating layers. Then just mix up some tomato, garlic and herbs of your choice and pour them over the top. Finish off with some grated cheese over the top and then bake in the oven for about 30 minutes. Simple and delicious.
