Make a beef wellington without the beef but add extra veg like muhrooms, peppers, onions, courgettes, whatever other veg you fancy, mix the up with fresh herbs and some garlic, add to the centre of a square of pastry (short or puff), wrap over the ends, to make a package. Brush with egg yolk and bake in moderate oven for 30 mins or thereabouts. Serve with an onion gravy made with homemade veg stock if you are strictly vegetarian or chicken stock if not - delicious!! You could even add the vegetables to a casserole dish, add the stock to the vegetables and herbs and cover with a scone topping.
