    To retains firmness and distinctive flavour of peppers (capsicum) red or green when using in stews or pasta sauce - halve the pepper, deseeded and just gently lay it on the top, cut side down during the cooking. Don't stir it in. Before serving, lift out pepper, slice and add to the dish.
