    the cheese is mozzarela, better buy fresh and cut it in big round pieces
     
    the cheese is buffala(buffalo) mozzarella. a wee bit more expensive than the standard ball or pizza block stuff but far superior in flavour and texture. try using 1/2 mozzarella and 1/2 tallegio or even camembert or brie de meaux. a grate of fresh parmesan or grana padano before serving adds another dimension.think i'll go make pizza!!! happy eating
     
    na any cheese really but if you want flavour like johnchef use mozzarela.but i use feta cheese and this gives it a crumbly texture and but extreme taste
