tasty and easy: cooked rice, red onion- sliced, chicken - diced, chilli - chopped, mango - diced avocado - diced, juice 1 lime, coriander. Fry onion chicken, chilli. Squeeze juice 1 lime. Add diced mango stir through for couple of minutes. Add cooked rice (when still hot), throw in chopped avocado last minute and add chopped coriander. Serve. Delicious!
