if u like smoked fish then try a home made pickled cucumber to go with it.peel skin off, half lengthways and de-seed a cucumber by scrapaing seeds out with a teaspoon.thinly slice and put in a colander or big sieve over a bowl.sprinkle on a teaspoon of salt and mix well in. leave for an hour.rinse the salt off in cold water and dry the cucumber well an a clean teatowel.while cucumber is salting mix 3 tblsp white wine or cider vinegar with 1tblsp white sugar in a small pan and warm till sugar's dissolved.cool the mix and add to the dried cucumber with salt and pepper to taste and a teaspoon fresh chopped dill(or half tsp dried dill)leave to marinate a couple hrs and taste and adjust seasoning.serve with smoked salmon,eel etc.when pickled u can add some creme fraiche if drained well which goes well with pickled herring(rollmops)
